To create a warm, draft-free place where dough can rise, you should set the dish of dough on an oven rack with a pan of hot water on the rack below.

    Oh, now that’s another way to do it. I’ve always tried to ‘warm’ the even for a couple of minutes then turn it off before putting the dough in. This should be great during the ‘dry months’ when I’m in AZ. Thanks!
