Written by Lisa on June 28, 2008 – 12:10 am -Never use an electric mixer when making muffins. It beats the batter too vigorously which will cause the muffins to be tough and have pointed, peaked tops.

That goes for making any kind of cake, even pancakes. People have a tendency to over beat the batter and then the cakes are almost solid.
