Talking Turkey

It is hard to believe that Thanksgiving is almost here already!  That being said — I am cooking my first Thanksgiving dinner this year, so I am all about finding all the help I can get.  While looking for some ideas and recipes, I can across Better Homes and Gardens and found that they have a lot of helpful information.  They have an excellent tasty recipe section that has cranberry sauces, holiday salads, spice-rubbed turkey, turkey stuffings, and even a wine guide just to name a few.  They also have a lot of crafts and decorating ideas. You can make the Wheat Centerpiece, Thanksgiving Crafts for Kids, Thanksgiving Day Cards, Tic-Tac-Toe, and the Wild Turkey.  We can’t forget the Turkey Roasting Guide which is what I really need.  Best of all, its free!  The roasting guide helps you figure out defrosting and cooking instructions for your turkey, as well as chicken, beef, pork, and other large cuts of meat. You can even select the time you want to serve your meal and get a personalized cooking schedule.

    One of our clients is the only us manufacturer of pop-up turkey times…would you like me to send you some? They also have a DVD on how to cook poultry!

    My wife and I did our first Thanksgiving dinner at our home for her family a couple years ago. Talk about stressful! I feel your pain… :)

    We bought 1 small turkey to make ourselves, and purchased another small one from Honeybaked Ham in case the one we ade was terrible. EVERYONE agreed that my wife’s turkey was the best they had ever had!

    I suggest finding a brining recipe and brining your turkey for a day or two before cooking it. This keeps it moist (assuming you baste it regularly while it is cooking) and brings out (and adds) flavor. It worked the first time and has worked every year since.

    I’ll try to remember to get our recipe and post it here for you… it truly is excellent.

    Here’s the environmentastic! plug: buy a heritage turkey, and try to buy a local one, if at all possible.

    Ok, if this is your first turkey you will be a bit worried about basting. Don’t be, put an entire pound of bacon ON that turkey. Criss-cross the strips. Take it off the last 1/2 hour. We have been dong this since before I was a baby. It is juicy and delicious! You know that bacon makes everything better! Get a fresh turkey if you can, you can order one NOW at your local butcher’s. I still baste, just not as much, The bacon does it!
