Written by Lisa on December 1, 2008 – 8:00 am -To test meatloaf for doneness, use a meat thermometer. Insert the thermometer into the center of the loaf. If the meatloaf is 155 degrees, it is okay to take it out. The meat will warm to 160 degrees as it rests.

Don’t worry if the loaf still looks pink in the middle. As long as it’s the right temperature, you are ok! There is something with meatloaf that causes it to remain pink–can’t think of the actual reason right now!
