This is a recipe from my sister Kari. She loves it!
8 oz spaghetti
2 large eggs, lightly beaten
2 tablespoons butter, melted
4 tablespoons grated, Paresan cheese, divided
1/2 teaspoon salt
1 package 9 oz spinach chopped
1 container small curd cottage cheese (12 oz)
1 1/2 cups pasta sauce
1 cup shredded mozzarella cheese
1. Preheat oven to 350 F. Coat a 10 inch round baking dish with cooking spray. Cook pasta according to package directions. Drain.
2. Combine pasta, eggs, butter 2 tablespoons Parmesan and 1/4 teaspoon salt in large bowl;toss to coat well. Place in prepared baking dish, pressing onto bottom and up side of the dish.
3. Mix spinach, cottage cheese, remaining Parmesan and remaining salt in a medium bowl. Spread in the center of pasta mixture. Pour pasta sauce over psinach mixture without covering edge of pasta.
4. Bake pie for 30 minutes, Sprinkle mozzarella over sauce. Continue baking until thoroughly heated and cheese is melted about 15 minutes. Let stand 10 minutes before cutting into wedges.
