This recipe is a new favorite in our house. This should make 4 servings. However, the next time I make it, I will be doubling the recipe, because Bill and I could have eaten more. My kids both had almost 3 bowls of it each!
2 tbsp milk
1 egg white
1/2 lb ground beef
1/4 cup bread crumbs
1/8 tsp pepper
2 cups water
2 cups pasta sauce
1 2/3 cups rotini noodles
2 tbsp Parmesan cheese
Heat over to 450 degrees. In a bowl, mix egg white and milk. Stir in ground beef, bread crumbs, and pepper. Shape into 1 inch balls and place in an ungreased 15x10x1 inch pain (I just used a cookie sheet). Bake about 10 minutes.
Meanwhile, heat water and pasta to boiling. Stir in pasta, and reduce heat. Simmer for about 15 minutes or until pasta is done. Stir in meatballs and heat until hot. Serve with Parmesan cheese sprinkled over the top.
