I am a huge fish fan. We eat fish at our house at least once a week, so I was very happy to try out the Gorton’s Artisan Fillets.

Artisan fillets are available in Roasted Garlic & Italian Herb, Lemon & Cracked Peppercorn, Southwest Tortilla, and South Style varieties. Right now, our favorite flavor of Artisan Fillets has to be the South Style. To be honest, I expected it to be super hot. It wasn’t. It was the perfect amount of spice to compliment the fish. My husband, who normally doesn’t even like fish, love these! My kids asked for seconds and thirds. You know a product is a winner when your family wants more!

Mini Meatloaves

Ingredients
  • 1 can (8 oz) Tomato Sauce
  • 3 tablespoons firmly packed brown sugar
  • 1 tablespoon mustard
  • 1 pound ground chuck beef (80% lean)
  • 1 can (14.5 oz) Diced Tomatoes, drained
  • ⅓ cup finely chopped yellow onion
  • ¾ cup Italian-style bread crumbs
  • 1 egg, beaten
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground black pepper
Instructions
  1. Preheat oven to 400°F. Lightly spray muffin pan with cooking spray and set aside. Combine tomato sauce, brown sugar and mustard in small bowl; set aside.
  2. Combine all remaining ingredients in large bowl. Add ¼ cup reserved sauce mixture (from above) to meat mixture and mix in. Divide meat mixture evenly and place into prepared muffin cups.
  3. Bake 25 minutes or until no longer pink in centers (165°F). Top each mini loaf with 1 tablespoons sauce; bake 5 minutes more or until sauce is set. Serve with remaining sauce.

Turkey Taco Salad

  • 12 oz ground turkey
  • ½ onion
  • 1 zucchini
  • 1 red bell pepper
  • 10 grape tomatoes
  • 8 oz romaine lettuce
  • 1 jalapeno
  • 1 lemon
  • 1 bunch cilantro
  • ½ cup monterrey jack cheese
  • 1 bag guacamole bites
  • 2 T olive oil
Instructions
  1. Dice the red pepper, onion, and zucchini.
  2. Halve the tomatoes.
  3. Chop the jalapeno and cilantro.
  4. Cut the lemon into wedges.
  5. Tear the lettuce into bite size pieces.
  6. Heat 1 T of olive oil. When hot, add the onion and cook for 2-3 minutes.
  7. Add the red bell pepper, jalapeno, and zucchini. Cook 2-3 minutes. Transfer to a plate.
  8. Add 1 T of olive oil in the same pan and cook the turkey for 4-5 minutes breaking the turkey up.
  9. In a bowl, toss the lettuce with the tomatoes and ½ of the guacamole bites.
  10. Divide between 2 serving plates and top with the turkey, vegetables, cheese, and a generous handful of guacamole bites.
  11. Sprinkle the cilantro and serve the lemon wedges on the side.
