Seared Steak

Ingredients
  • 12 oz steak
  • 6 oz broccolini
  • ½ oz dill
  • 1 sweet potato
  • 1 oz peanuts
  • ½ t cinnamon
  • 4 T butter
  • 2 T Olive oil
Instructions
  1. Bring pot of salted water to a boil. Cook the broccolini in the boiling water for 30 seconds.
  2. Fill a large bowl with water and ice cubes.
  3. Drain broccolini and transfer it to the ice water. When cold, set aside.
  4. Chop the dill.
  5. Peel the sweet potato and cut into 8 equal pieces. Add the sweet potato pieces to a pot with cold water. Bring to a boil, lower the temp, and simmer for 15 minutes.
  6. Drain the sweet potato and return to the pot. Add 2 T of butter and cinnamon and mash with a fork.
  7. Season the steak with salt and pepper. Heat the oil in a skillet over medium heat. When hot, cook the steaks for 2 minutes on each side. Remove.
  8. Heat 1 T of oil and the remaining butter in a pan over medium heat. When the butter has melted, add the peanuts and stir for 1 minute.
  9. Add in the broccolini until hot and crispy.
  10. Serve the steak with the sweet potato and broccolini on the side. Top with fresh dill.

Beef Macaroni Soup

Ingredients
  • 1 pound ground beef
  • 2 cups frozen mixed vegetables
  • 1 can (14-1/2 ounces) diced tomatoes, undrained
  • 2 cans (14-1/2 ounces) beef broth
  • ¼ teaspoon pepper
  • ½ cup uncooked elbow macaroni
Instructions
  1. In a large saucepan, cook beef over medium heat and drain.
  2. Stir in the mixed vegetables, tomatoes, broth and pepper. Bring to a boil; add macaroni.
  3. Reduce heat; cover and simmer for 10 - 15 minutes or until macaroni and vegetables are tender. (adjust your beef broth accordingly)

 

Italian Sausage Soup

Italian Sausage Soup

  • 1 lb Italian sausage
  • 1 cup white rice
  • 1 can diced tomatoes
  • ½ lb chopped frozen spinach (1-10 oz box), thawed and drained (I used fresh)
  • 6 cups beef broth
  • ¼ tsp black pepper, ground
  • Cheese for garnish
Instructions
  1. Brown sausage in a soup pot and break the meat up with a fork as it cooks. Add in rice, beef broth, tomatoes and black pepper and bring to a simmer.
  2. Cook 12-15 minutes or until rice is tender. Stir in chopped spinach and let simmer for a few minutes.
  3. Ladle soup into soup bowls and garnish with freshly grated cheese.
