When creaming mixtures of butter and sugar, start an electric mixer at a low setting to blend the ingredients.  Gradually increase the speed to high to get more volume into the batter.

Batter breads are yeast breads that start with a batter instead of dough.  They are mixed with a mixer instead of being kneaded.

Tip Of The Day

Overbeating toughens quick breads.  To avoid overbeating, mix dry ingredients together in one bowl, liquid ingredients in a second bowl, and then combine the two.  Then stir enough to moisten the batter.
