Batter can be refrigerated for up to 4 weeks.

Overmixing muffin batter can cause “tunnels” and pointed tops.  You should mix until the dry ingredients are moistened.

Rinse, thoroughly drain, and pat dry frozen blueberries to keep them from discoloring batter.
