Store biscotti in an airtight container.  Biscotti can also be frozen, wrapped airtight in freezer weight plastic bags or in layers (separated by waxed paper) in plastic freezer containers.

Biscotti are twice baked for extra crunch.  First the dough is baked in a log, then it is cut into inch long pieces and baked again.
