Slow Cooker Chicken Dinner

  • 1 whole chicken
  • 2 tsp salt
  • 1 tsp paprika
  • 1 tsp onion powder
  • ½ tsp dried thyme
  • 1 tsp Italian seasoning
  • ½ tsp black pepper
  • 16 oz carrots
  • 6 potatoes, cubed
Instructions
  1. Place carrots and potatoes in the slow cooker.
  2. In a bowl, combine all of dried spices. Rub the spice mixture all over the bird, inside and out. Place the bird breast-side down into the crockpot on top of the carrots and potatoes.
  3. Cook on low for 6 - 8 hours.

  • 1 quart beef broth
  • 1 quart water
  • 1 medium onion, cut into eighths
  • 1 bay leaf
  • 1 pound ground beef
  • ½ cup long-grain rice
  • 1 large egg
  • 2 teaspoons oregano
  • 2 teaspoons garlic salt
  • ¾ teaspoon black pepper, divided
  • ¼ teaspoon ground cumin
  • ½ cup all-purpose flour
  • 3 medium potatoes, peeled and chopped
Instructions
  1. Combine the beef broth, water, onion and bay leaf. Bring to a boil over high heat.
  2. Combine ground beef, rice, egg, oregano, garlic salt, ½ teaspoon black pepper and cumin in a large bowl and mix well. Shape mixture into 1-inch meatballs.
  3. Coat the meatballs with flour. Drop them into the boiling broth and cover. Reduce heat to low. Cook, stirring frequently, for 45 minutes.
  4. Add the potatoes to the soup and cover. Cook, stirring occasionally, until the potatoes are tender (about 1 hour). Remove the bay leaf. Season with remaining black pepper.
Notes
You can definitely add more vegetables like carrots to this.

 

Italian Sausage Soup

  • 1 lb Italian sausage
  • 1 cup white rice
  • 1 can diced tomatoes
  • ½ lb chopped frozen spinach (1-10 oz box), thawed and drained (I used fresh)
  • 6 cups beef broth
  • ¼ tsp black pepper, ground
  • Cheese for garnish
Instructions
  1. Brown sausage in a soup pot and break the meat up with a fork as it cooks. Add in rice, beef broth, tomatoes and black pepper and bring to a simmer.
  2. Cook 12-15 minutes or until rice is tender. Stir in chopped spinach and let simmer for a few minutes.
  3. Ladle soup into soup bowls and garnish with freshly grated cheese.
