Mini Meatloaves

  • 1 can (8 oz) Tomato Sauce
  • 3 tablespoons firmly packed brown sugar
  • 1 tablespoon mustard
  • 1 pound ground chuck beef (80% lean)
  • 1 can (14.5 oz) Diced Tomatoes, drained
  • ⅓ cup finely chopped yellow onion
  • ¾ cup Italian-style bread crumbs
  • 1 egg, beaten
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground black pepper
Instructions
  1. Preheat oven to 400°F. Lightly spray muffin pan with cooking spray and set aside. Combine tomato sauce, brown sugar and mustard in small bowl; set aside.
  2. Combine all remaining ingredients in large bowl. Add ¼ cup reserved sauce mixture (from above) to meat mixture and mix in. Divide meat mixture evenly and place into prepared muffin cups.
  3. Bake 25 minutes or until no longer pink in centers (165°F). Top each mini loaf with 1 tablespoons sauce; bake 5 minutes more or until sauce is set. Serve with remaining sauce.

Easy Meatloaf

  • 1 egg
  • ¼ cup ketchup
  • 4 tablespoons barbeque sauce
  • 1 teaspoon Worcestershire sauce
  • ¼ cup sugar
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried parsley
  • ½ teaspoon seasoned salt
  • 1 pound ground beef
  • ⅔ cup dry bread crumbs
  • ⅓ cup shredded Cheddar cheese
Instructions
  1. Preheat oven to 350 degrees F. Lightly grease a 5x9 inch loaf pan.
  2. In a bowl, stir together the egg, ketchup, barbeque sauce, Worcestershire sauce, brown sugar, onion, parsley, garlic, and seasoned salt. Mix in ground beef, bread crumbs, and Cheddar cheese. Spread into the loaf pan. I also added an additional 2 tbsp of bbq sauce over the top of the meatloaf.
  3. Bake 55 minutes in the preheated oven till the internal temperature reaches at lease 160 degrees F.

Italian Meatloaf

Bill loves this meatloaf.  However, when trying to get it out of the pan, the bottom did stick a little (so you may have to spray the pan down first).  It also drained off the grease while it was cooking (about half way through and again when I pulled it out of the oven).

  • ¾ cup dry bread crumbs (I'm going to try a full cup next time I make this)
  • ¼ cup ketchup
  • 1 teaspoon Italian-style seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon garlic salt
  • 1 (14.5 ounce) can diced tomatoes, drained (I used the ones with basil and oregano flavoring)
  • 2 cups shredded mozzarella cheese
Instructions
  1. Preheat oven to 350 degrees F.
  2. In a large bowl, mix together ground beef, eggs, bread crumbs and ketchup. Add in the Italian-style seasoning, oregano, basil, garlic salt, diced tomatoes and cheese. Press into a 9x5 inch loaf pan, and cover loosely with foil.
  3. Bake 1 hour or until internal temperature reaches 160 degrees F.
