Quick breads have a better consistency if allowed to completely cool before slicing.  Many taste better the second day when the flavors have had a chance to develop.

Tip Of The Day

Let quick breads cool completely before covering them in plastic wrap or foil.  Wrapping a hot bread causes the steam to go back into the dough which makes the bread soggy and gummy.

Overbeating toughens quick breads.  To avoid overbeating, mix dry ingredients together in one bowl, liquid ingredients in a second bowl, and then combine the two.  Then stir enough to moisten the batter.

Raisin bran cereal is a great way to add texture, flavor, and nutrition to quick breads.  It is full of fiber, iron, and vitamin A.

Tip Of The Day

Cornmeal can be yellow, white, or blue depending on the type of corn used.  Yellow works best for most corn breads..
