Spaghetti Casserole

My kids love this recipe. Bill and I think it is a tad bland, but we haven’t figured out what needs to be added to give it a little more kick.

Spaghetti Casserole
  • 1 pound spaghetti
  • 1 pound lean ground beef
  • 1 tsp minced garlic
  • 1 (14.5 ounce) can diced tomatoes w/ garlic, basil, and oregano
  • 1 (10.75 ounce) can condensed tomato soup
  • 2 cups tomato juice
  • 2 cup shredded Cheddar cheese
  1. Preheat oven to 350 degrees F.
  2. Prepare the spaghetti noodles as it says on the box.
  3. Brown the ground beef with the minced garlic, and drain.
  4. Place the beef in a 9x13 inch baking dish. Top with tomatoes, tomato soup and tomato juice. Layer spaghetti over tomatoes and top with shredded cheddar.
  5. Bake in preheated oven for 45 minutes, until cheese is golden and bubbly.

Sausage Bake



Sausage Bake
  • 2 cups uncooked penne pasta
  • ½ lb Italian sausage
  • 1 medium onion chopped
  • 1 tsp dried oregano leaves
  • ½ tsp Cajun seasoning
  • 1 cup tomato juice
  • 1 can diced tomatoes undrained
  1. Heat over to 350 degrees. Cook and drain pasta as directed on the package. Set aside.
  2. Cook sausage and onion until browned. Drain and stir in oregano and Cajun seasoning.
  3. Stir sausage mixture into pasta. Stir in the remaining ingredients. Spoon into an ungreased 2 qt casserole dish. Cover with foil and bake 50 - 60 minutes.

Popeye’s Casserole

Madison, my 5 year old, is a huge Popeye fan.  She knows he gets big and strong from eating spinach, and since this casserole has spinach in it, we call it popeye’s casserole in my house.  This doesn’t fall under one of the easiest recipes to make just because at one point I have 3 different pans going on the stove at one time.  I make sure Bill is home when I making this.



Popeye's Casserole
  • 3 cups medium noodles
  • 1 lb ground beef
  • 2 8-oz cans tomato sauce
  • 1 tsp basil
  • ½ tsp sugar
  • ½ tsp garlic powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 1 8-oz carton sour cream
  • 1 8-oz pkg cream cheese
  • ½ cup milk
  • ⅓ cup chopped onion
  • 5 oz frozen chopped spinach, cooked and well drained
  • 1 cup shredded cheddar cheese
  1. Grease a 2 qt casserole dish and set aside. Cook noodles according to the directions on the box, drain, and set aside.
  2. In a large skillet, cook beef until brown and drain. Stir in tomato sauce, basil, sugar, garlic powder, salt, and pepper. Bring to a boil and reduce heat. Simmer uncovered for about 5 minutes.
  3. In a mixing bowl, beat together the sour cream and cream cheese with an electric mixer until smooth. Stir in the milk and onion. In the casserole dish, layer half of the noodles, half of the meat mixture, half of the cream cheese mixture, and all of the spinach. Top it with the remaining meat mixture and noodles. Cover and chill remaining cream cheese mixture.
  4. Cover the casserole with foil and bake at 350 degrees for about 45 minutes. Uncover, spread with the remaining cream cheese mixture, and sprinkle the cheddar cheese over the top. Bake uncovered for about ten more minutes or until cheese is melted.
  5. Let stand for about 10 minutes before serving.
