Neufchatel cheese is very similar to cream cheese but has fewer calories.  It can be substituted for cream cheese.

Lisa’s Chili

Now, this is a very simple recipe since this was the first time I made this! We fed 6 adults and two kids with this and still had leftovers. It is not spicy, so everyone should be able to eat it (I have a 4 year old and a 1 year old so spicy is out of the question here).

1 lb ground beef
1 small onion chopped
2 cups of elbow macaroni
28 oz can of diced tomatoes
1 can kidney beans
2 15 oz cans of tomato sauce
1 46 oz bottle of tomato juice (this can actually be smaller however that is what I bought)
1 pkg of chili seasoning

Brown ground beef and onion together and drain. Also, make the elbow macaroni noodles as directed on the box.

In the meantime, put the diced tomatoes, kidney beans, tomato sauce, and chili seasoning into a stick pot and stir together. Pour the beef and noodles in when done. Stir. Bring to a boil, then cook on low until you are ready to eat. Add in the tomato juice when and if you feel like the chili is becoming too think. I ended up using about 23 oz of the tomato juice, because we ate this during a football game.

You are able to add whatever topping you like when serving. I personally did shredded cheese while my husband added hot sauce, shredded cheese, and oyster crackers.

On The Go Pizza Casserole

1 can of Pillsbury refrigerated buttermilk biscuits
1 can pizza sauce
2 cups shredded mozzarella cheese (I didn’t have mozzarella cheese when I made this so I used what shredded cheese I had available)

Preheat oven to 375 degrees. Spray a 8 inch glass baking dish with cooking spray. Separate the dough into biscuits and cut each biscuit into quarters and place into a medium sized bowl. Stir in the pizza sauce. Spoon biscuit mixture evenly into dish.

Bake 15 - 20 minutes or until light golden brown and center biscuits are no longer doughy. Sprinkle with cheese and bake about 5 minutes longer or until cheese is melted. Cut into squares and serve with warm pizza sauce for dipping.

Pizza Hut’s Tuscani Pasta - Premium Bacon Mac ‘n Cheese Giveaway!

I love Pizza Hut.  When I heard they were coming out with the Premium Bacon Mac ‘n Cheese Tuscani Pasta, I knew we had to try it. This did not disappoint.  The rotini pasta is covered with an awesome chedder cheese sauce.  That is then topped with more cheese and bacon.  An order of the Premium Bacon Mac ‘n Cheese is about 3 pounds and should feed a family of four.  It also comes with 5 breadsticks.  This dinner is quite affordable too — it is only $12.99!  Everyone at my house truly like it.  I like how cheesy it was, my husband loved the bacon topping, Will (my one year old) could actually feed this to himself, and Madison (my four year old) just thought the whole thing was “super yummy in my tummy”.
