Slow Cooker Barbecue Chicken
  • 6 boneless skinless chicken breast
  • 1 (18 ounce) bottle barbeque sauce
  • ½ cup Italian salad dressing
  • ¼ cup brown sugar
  • 2 tablespoons Worcestershire sauce
  1. Place chicken in a slow cooker.
  2. In a bowl, mix the barbecue sauce, Italian salad dressing, brown sugar, and Worcestershire sauce. Pour over the chicken.
  3. Cover, and cook 3 to 4 hours on High or 6 to 8 hours on Low.
  4. About 1 hour before serving, shred chicken.

201 Gluten-Free Recipes for Kids: Chicken Nuggets! Pizza! Birthday Cake! All Your Kids’ Favorites – All Gluten-Free! is by far my most favorite gluten free cookbook! I initially made the easy bake chicken and the orange beets. Both recipes were so easy to follow, fast and most importantly delicious. This is such a great resource for anyone who has celiac disease or gluten sensetivities. This book is complete with step-by-step instructions, as well as, cooking substitutions. I’ve made so many recipes from this book, but forget to take a photo and realize it after my family’s plates are pretty much licked clean!


I also made the basic chicken noodle soup. This recipe, again was was easy to make, and the family enjoyed it. The kids request this recipe to have as a snack after school. The best part its so healthy with all the veggies! So I serve them the requested soup snack with great pleasure!


Overall, the book is great, not just for kids, but adults alike. The recipes are easy to follow, with most items that are already on hand in your kitchen. Simple, nutritious and gluten-free. I would even say this book is easy on your wallet, because almost all the ingredients can be found at your favorite local grocery store.

Crock Pot Chicken & Rice

I got the idea for this recipe from stick a fork in it.


Now, ours seemed a bit salty. I am still trying to figure out it was the Italian Dressing or the Cream of Chicken Soup. However, it was still a huge hit in our home, and we will definitely be making this again!


Crock Pot Chicken & Rice
  • 2-4 frozen boneless skinless chicken breasts
  • 1 pkg. (8 oz.) cream cheese (let sit out to soften)
  • 1 can cream of chicken soup
  • 1 pkg. italian dressing seasoning (the dried kind in the packet)
  • rice
  1. Stir the cream cheese, cream of chicken, and seasoning together in the crockpot. Add the chicken in and cover with the mix.
  2. Cook on high in your slow cooker for 4-6 hours or until the chicken is cooked and falling apart.
  3. Cook the rice as you normally would make it. Add the chicken and chicken mixture onto a bed of rice and enjoy!
