Pizza Lasagna

Ingredients
  • 9 uncooked lasagna noodles
  • 1 can pizza sauce
  • 1 can diced tomatoes
  • 1 container (15 oz) ricotta cheese
  • 1 tsp Italian seasoning
  • 2 cups shredded mozzarella cheese or Italian blend cheese
  • 2 packages of pepperoni slices (3½ oz each)
Instructions
  1. Cook lasagna noodles as directed on package and drain.
  2. Preheat over to 350 degrees. Spray 12x8 (I only have a 8X8 so I used that instead) glass baking dish with cooking spray. In saucepan, mix pizza sauce and tomatoes. Cook until throughly heated. In a small bowl, mix ricotta cheese and Italian seasoning.
  3. Spread ¼ cup pizza sauce mixture in bottom of baking dish. Arrange 3 cooked noodles over the sauce. Spoon and spread half of the ricotta mixture over the noodles. Top with ½ cup of the mozzarella cheese, 1 cup sauce mixture, ⅓ each of the pepperoni slices. Repeat layers once.
  4. Top with remaining noodles, sauce mixture, mozzarella cheese, and pepperoni slices.
  5. Bake uncovered 30 - 35 minutes or until bubbly. Let stand 15 minutes before serving.

  • 1 box (16 oz) lasagna noodles
  • 1 lb sweet Italian sausage
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • ½ tsp crushed red pepper flakes
  • 2 eggs
  • 2 lbs ricotta cheese
  • 2 cups shredded mozzarella cheese (8 oz)
  • ¼ cup grated Parmesan cheese
  • 1 jar (48 oz) seasoned tomato sauce
Instructions
  1. Preheat oven to 350 degrees F. Cook lasagna noodles as package directs; drain and rinse.
  2. Meanwhile, in a nonstick skillet, cook sausage and onion till brown. Drain fat. Stir in garlic and red pepper flakes. Remove from heat and set aside.
  3. In a large bowl, combine eggs, ricotta, mozzarella, Parmesan, and basil. Mix well.
  4. Spread a layer of tomato sauce in a 13 x 9 inch baking dish; top with a layer of noodles. Cover noodles with a layer of the cheese mixture; top with some sausage mixture. Cover with a layer of sauce. Repeat layering with noodles, cheese mixture, sausage mixture, and sauce. Top with final layer of noodles and sauce.
  5. Bake covered for 45 minutes. Uncover and bake about 15 minutes. Let stand for 5 minutes before serving.
