Chicken Enchiladas

  • 2 cups salsa
  • 1 8-oz package of cream cheese (cubed)
  • 1.5 - 2 lbs of cubed boneless skinless chicken
  • 8 flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy whipping cream
Instructions
  1. Preheat your oven to 350. Spray a 9" x 13" baking dish with non stick spray.
  2. In a saucepan, stir together salsa, cream cheese, and chicken. Cook until the cream cheese melts.
  3. Spoon 2-3 tablespoons of the mixture down the center of each of the tortillas. Roll up the tortillas and place seam side down in dish. Sprinkle with cheeses. Drizzle the heavy whipping cream over the top.
  4. Bake for 30 minutes.

  • 1.5 - 2 lbs Flank Steak
  • 2 tablespoons grill seasoning
  • ½ cup bleu or gogonzola cheese
  • ½ cup cream cheese
  • 1 tablespoon minced onions
  • 3 tablespoons horseradish
  • 1 tablespoon olive oil
  • ½ cup of beef broth
Instructions
  1. Preheat over to 375. Tenderize steak (we pounded ours with our meat tenderizer). Season both sides with the grill seasoning.
  2. In a bowl, mix together the bleu cheese, cream cheese, minced onions, and horseradish. Spread over the top of the flank steak. Roll up the steak and secure with toothpicks (If that doesn't work, use string).
  3. Put in a 8" square baking dish. Drizzle the olive oil over the top. Pour the beef broth in the bottom of the dish, and cover with aluminum foil. Bake for 60 minutes.

Oreo Fudge Cremes

My family and I recently got to try out the newest Oreo creation — Oreo Fudge Cremes.  I have one word for you — Yum.  Or as my soon-to-be four year old likes to say, “It’s so yummy in my tummy”.

Now, we are Oreo fans.  Classic Oreos that is.  My husband has even taught my kids already (7 and 3) how to properly eat an Oreo cookie with a glass of milk.  They know the proper technique to twist off the top of the cookie and everything.  🙂  That is why we were super excited to try out the Oreo Fudge Creme cookies.

Oreo has developed a variety of these Oreo Fudge Cremes that will satisfy everyone.  If you don’t know what an Oreo Fudge Creme cookies is, it’s the thin Oreo cookie, topped with the unmistakable Oreo creme, wrapped in fudge.  They have two new delicious flavors, Peanut Butter Creme and Golden Oreo.  My favorite is the Peanut Butter Creme.  To me, it tastes like a certain cookie my daughter sells with her troupe (without naming names here).  It is sooooo good.  I love that one of these cookies can tame my chocolate craving.  Now, Bill loves the Golden Oreo.  He couldn’t give me a reason why besides they are really good.  For somebody who normally doesn’t eat anything that has chocolate on it, it is quite surprising that he took the bag and hid it from the kids.  🙂

There is also the new Oreo Creme Filled Brownies. Oreo has taken what you love about Oreo and created its own version of the classic brownie—a rich, chocolaty Oreo treat, filled with the one of a kind Oreo creme, and then topped with a lacy, sweet drizzle. Can you say super duper yum?

Oreo has definitely gotten it right with their new product offerings!!!
