Simply Potatoes

How you simplifying your summer?  It’s so hot here in Chicago, so the simpler dinner can be; the happier mom is.  Simply Potatoes does just that for dinner time.  First of all, there is the convenience.  There is no peeling, slicing, dicing or mashing potatoes.  Open the bag and that’s it.   They are better for you.  Their cut potatoes and steamables are all fat free, cholesterol free and 90 calories or less per serving.  Simply Potatoes has a ton of variety.  It is available in a number of mashed and cut varieties, delicious right out of the microwave, off the grill or added to your family’s favorite dish. Best of all, I’ve tried several of their varieties and they are all good.  I personally love the Steakhouse Potatoes.  They are just soooo good.  I can only highly recommend trying out Simply Potatoes!

Better n’ Eggs

Did you know that November is National Diabetes Awareness Month? There are three major types of diabetes. The causes and risk factors are different for each type. Type 1 diabetes can occur at any age, but it is most often diagnosed in children, teens, or young adults. In this disease, the body makes little or no insulin. Daily injections of insulin are needed. The exact cause is unknown. Type 2 diabetes makes up most of diabetes cases. It most often occurs in adulthood, but teens and young adults are now being diagnosed with it because of high obesity rates. Many people with type 2 diabetes do not know they have it. Gestational diabetes is high blood sugar that develops at any time during pregnancy in a woman who does not have diabetes. Diabetes affects more than 20 million Americans. Over 40 million Americans have pre-diabetes (early type 2 diabetes).

Type II Diabetes is preventable, and there are steps you can take to help, so you don’t get it. I personally have a family history of diabetes. I’ve got an aunt with it (and she’s always had for as long as I remember). A fond memory I will always have is that at every family party, she always told us that she’d only have a small piece of dessert (even though she shouldn’t have had the cake at all!). I also have an uncle who is heavier that also has developed diabetes (though he got it after he had a liver transplant). Diabetes is something I personally worry about for myself.

One of the ways to prevention is to learn more about this disease. Oprah’s personal trainer and health and wellness expert Bob Greene will be hosting a twitter party on 11/16 from 8-10pm EST to share nutrition and fitness tips, and to share about products that can help individuals live with or prevent Type II diabetes, such as Crystal Farms® Better’n Eggs and AllWhites.

One recipe you can use them in is Bacon Cheddar Mini Egg Cups. Here’s who you make them:

24 wonton wrappers*
nonstick cooking spray
2 strips bacon
1/2 cup grape tomatoes, chopped
1 teaspoon chopped fresh basil**
1 cup AllWhites®
1/2 cup fat-free half and half
1/4 teaspoon salt
1/2 cup Crystal Farms® Finely Shredded Sharp Cheddar Cheese

Heat oven to 350°F. Spray one side of each wonton wrapper with nonstick cooking spray. Press each wrapper in to cups of miniature muffin pan, spray side down. Once all wrappers are in place; spray inside of each wrapper with additional nonstick cooking spray; set aside.

In small nonstick skillet cook bacon until crisp. Drain grease; finely chop bacon. In small bowl stir together cooked bacon, tomatoes and basil. Divide mixture evenly into each wonton cup.

In small bowl stir together AllWhites, fat-free half and half and salt. Carefully pour into each wonton cup. Sprinkle with cheese.

Bake for 13 to 15 minutes or until eggs are almost set. Serve warm or at room temperature.


*Wonton wrappers are usually found in the refrigerated produce section of the grocery store. Wrappers are typically 3 1/4 inches square.

**Substitute 1/2 teaspoon dried basil

Customize this appetizer by adding 1/2 cup finely chopped mushrooms to each mini cup. Any variety will work. Also, Better’n Eggs can be used as a substitute for AllWhites.
