Back-to-School with Udi’s Gluten-Free Foods

School is back in session and coming up with gluten-free lunch ideas that won’t bore can sometimes be a challenge.

Let Udi’s make it easier (and more fun) with our selection of gourmet snacks and goodies that last will last in your child’s school bag and locker through all those morning activities and into lunchtime.

SONY DSCUdi’s Soft & Chewy Dark Chocolate Brownie Bites: Oh man, these are absolutely delicious! You’d never believe they are gluten free. The chocolate chips in the brownie give it a nice added texture.

SONY DSCUdi’s Ancient Grain Crisps with Aged Cheddar: Initially opening the bag it definitely smells aged, but once you get it into your mouth and chew it, they taste great. The family loved it so much, that my husband, who is not gluten free, requested that I make sure to pick up more bags when I’m at the store.

SONY DSCUdi’s White Sandwich Bread: Best gluten-free bread ever. I’ve tried many other brands, but this is by far our favorite. We load it up like a Subway sandwich for lunch, and the bread holds up great… not crumbly or dry at all. The kids even love it toasted in the morning spread with butter and jam.

SONY DSCUdi’s Mighty Bagel: These bagels are awesome! They are not crumbly and dry. The kids love these bagels for breakfast out of the toaster. I’ve also made mini pizza bagels with these as an after school snack, which was a surprise and a huge hit with the kids.

SONY DSCUdi’s Whole Grain Hamburger Buns: Soft, not crumbly, good taste. It’s nice to finally have a complete hamburger, bun and all.

SONY DSCSoft & Sweet Cinnamon Raisin Bread: Soft, sweet and delectable. Warmed up with a little bit of butter spread on with a cup of coffee. Mmmm… makes me think of autumn and all it’s beauty.

SONY DSCHarvest Crunch Muffins: Yummy!!! We had these for breakfast. Even better is that it’s so nutritious made with cranberries, sweet potato, quinoa flour, flax seed, and pepitas. Great way to start the morning.

SONY DSCUdi’s Plain Tortillas: I was so excited to try these, because I honestly miss flour tortillas and was tired of the corn tortillas. Last night, I tried the tortillas for tacos. I threw 4 of them wrapped in a damp paper towel in the microwave for 20 seconds. I wrapped taco meat into the warm tortilla, but disappointed it fell apart. The second time around, I wrapped the tortillas individually in a damp paper towel for 20 seconds and what a difference! Chewy warm tortilla that held all of its taco filling together. Absolutely delicious!!! Today, I made a sandwich wrap for lunch, and again, delicious, chewy and it held the lunch meat together.

SONY DSCUdi’s Maple Pecan Chocolate Chip Cookies: I brought a box of these over to my cousin’s house over the weekend. My cousin put them out and within 2 minutes they were all gone. Guests couldn’t believe these cookies were gluten free. They were a little crumbly, but soft and chewy. Extremely tasty!

SONY DSCUdi’s Cherry Walnut Granola Clusters With Omega 3: These are full of taste, great snack at home or on the go. These are clusters full of gluten free oats, ancient grains, fruits and nuts. It is good source of iron. My kids can’t get enough of theses clusters.

Because of Udi‘s products, I can honestly say my children and I don’t feel like we are on a gluten-free diet because of the variety of foods they carry. We can finally have food we have missed eating that actually tastes great and almost, or as close as it can get, to the wheat laden foods. When it comes to gluten-free foods, you can never go wrong with UDI’s brand. My only suggestion is to keep your breads, buns and bagels in the freezer to keep them fresh longer and just take it out when ready to eat it by heating it in the microwave for a few seconds and they come out warm, fresh and not crumbly.

Horseradish Turkey Burgers with Pickled Onions and Jalapeño Mayo

Horseradish Turkey Burgers with Pickled Onions and Jalapeño Mayo
  • Pickled Onions:
  • 1 cup red wine vinegar
  • 1 tablespoon agave nectar
  • 1 bay leaf
  • 1 fresh thyme sprig
  • 1 teaspoon peppercorns
  • 1 large red onion, halved lengthwise and thinly sliced
  • Jalapeño Mayo:
  • Nonstick cooking spray
  • 2 jalapenos, stemmed, halved lengthwise, and seeded
  • 2 tablespoons fat-free vegetarian mayonnaise, such as Nayonaise
  • 1 teaspoon Dijon mustard
  • Burgers:
  • ½ cup whole wheat panko (Japanese-style bread crumbs)
  • ½ cup skim milk
  • 1 pound lean ground turkey, such as Jennie-O Lean Ground Turkey
  • 2 (2-ounce) links sweet Italian turkey sausage, such as Jennie-O Lean Sweet Italian Turkey Sausage, casings removed
  • 2 scallions, white and green parts, chopped
  • 2 tablespoons jarred grated horseradish, drained
  • 1 tablespoon Dijon mustard
  • Nonstick cooking spray
  • 4 whole grain hamburger buns, halved and toasted
  • ¼ cup crumbled light blue cheese
  • 4 pieces iceberg lettuce
  1. To make the pickled onions, combine the vinegar, agave nectar, bay leaf, thyme, and peppercorns in a medium pot. Slowly bring to a simmer over medium heat, stirring occasionally to dissolve the agave. Put the onions in a heatproof container; pour the hot vinegar over the top. The onions should be completely submerged in the liquid; put a small plate on top to weigh them down if necessary. Cover and cool to room temperature. Allow the onions to pickle for at least 15 minutes, or up to overnight (the longer, the better).
  2. To make the jalapeno mayo, coat a grill pan with nonstick cooking spray and place over medium-high heat or preheat a gas or charcoal grill and get it very hot. Put the jalapenos, cut side down, on the hot grill and cook until the chiles are charred on all sides, turning with tongs, about 5 minutes total. Remove the jalapenos from the grill (keeping it hot for the burgers); coarsely chop and put into a blender or food processor. Add the mayonnaise substitute and mustard. Blend until smooth. Set aside.   3. To make the burgers, in a small bowl soak the bread crumbs in the milk and set aside for
  4. minutes to allow them to absorb the liquid.
  5. In a large mixing bowl, combine the ground turkey and turkey sausage. Add the wet bread crumbs, scallions, horseradish, and mustard. Mix gently by hand to combine, being careful not to overwork the meat. Gently hand-form the meat mixture into four burgers.
  6. Spray the grill pan or grill with another coating of nonstick spray and make sure it is still hot. Grill the burgers for 5 minutes per side, or until no longer pink in the middle and juices run clear. The burgers should turn easily without sticking. Remove them to a clean side plate so you have enough room to toast the buns. Toast the hamburger buns, cut side down, for 1 minute.
  7. To assemble, smear 1 tablespoon of the jalapeno mayo on the bottom half of each bun. Set the burger on top, followed by the cheese and the pickled onions. Lay a lettuce leaf on top and enclose with the other half of the bun.

Udi’s Gluten Free Foods

Now, nobody in my house has to be gluten free. However, I do like to find things that will help us become more healthy. Gluten tends to be hard for your body to digest which causes the feeling of tiredness when you are over-full. When you avoid gluten, that excess energy can be diverted elsewhere rather than your digestive track. That being said — I tried a few of Udi‘s products on my family.

browniesDark Chocolate Brownie Bites was a huge favorite in my house. My kids ate these in less than 12 hours. They are decadently rich and perfectly satisfying. Indulgent dark chocolate will satisfy all of your sweet-tooth cravings, and wrap you in gluten free joy. Sure to be a hit with everyone, you won’t be able to resist these moist, fudgy bites of brownie! I couldn’t believe these were gluten free — they were sooo good!

muffinsHarvest Crunch Muffins were another hit in my house. These are great because not only are they gluten free, but they are also dairy, soy, and nut free. Madison ate these for breakfast for a week! They are filled with healthy ingredients rich in protein, vitamins, and minerals (3g protein, 4g fiber per muffin).

bagelsThe Mighty Bagel is filled with healthy ingredients that are rich in protein, vitamins, and minerals (8g protein, 3g fiber per bagel). These bagels will give you the boost you need to get your morning off to the right start. This is another morning favorite of Madison’s.

bunsGrilling in the backyard is now delicious, nutritious and gluten free with these Whole Grain Hamburger Buns. Loaded with 6 grams of fiber, these hamburger buns come fully equipped with the right nutrients to accompany a savory sandwich or classic burger. This is one of my favorite products of theirs!

cookiesRich chocolate chips and fresh baked cookie dough make this classic an instant hit. These Chocolate Chip Cookies didn’t last 24 hours in my house. Everybody loved them and couldn’t believe they were gluten free. They were so good.
