On The Go Casserole

This is an easy to make recipe for families on the go. It is made with ingredients you will easily find around your house. I have made this several times for my family. However, this last time I made this with low fat mozzarella cheese. Do NOT use low fat cheese. It never melts. 🙂 I learned that the hard way. However, the casserole was still really good.

  • 1 lb. ground beef
  • 1 jar spaghetti sauce
  • 1 (16 oz) package of rotini pasta
  • 2 cups of shredded mozzarella cheese
Instructions
  1. Preheat your over to 350 degrees F. While the oven is preheating, make your rotini noodles as directed on the box. Drain. Brown the ground beef. Drain.
  2. Add the spaghetti sauce and rotini pasta to the browned beef in a 3 qt casserole baking dish. Sprinkle the mozzarella cheese over the top and bake in oven for 25 minutes.

Tortellini: Slow Cooker Style

This is an easy to make slow cooker recipe that you can make in the morning and have for dinner!

  • 1 lb ground beef
  • ½ lb Italian sausage
  • 1 jar marinara or spaghetti sauce
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 (9 oz) package of refrigerated or fresh cheese tortellini (or whatever flavor you'd like)
  • 2 cups mozzarella cheese
Instructions
  1. Brown the ground beef and Italian sausage and drain. Combine the ground meats, marinara sauce, and tomatoes in a slow cook. Cover and cook on LOW heat for 7-8 hours.
  2. Stir in the tortellini and sprinkle the mozzarella cheese over the top. Cover and cook for 15 more minutes on low or until the tortellini is tender.

Tuna Noodle Skillet

This is a quick easy to make recipe.  This works well when you don’t have a lot of time to make dinner!

  • 3½ cups of mini penne noodles
  • 1 cup chopped celery
  • 2 tbsp water
  • ½ cup sour cream
  • ½ cup ranch dressing
  • 1 can tuna, drained, flaked
  • 1 jar chopped pimientos, drained
Instructions
  1. Cook and drain noodles as directed on the box. While they are cooking, place celery and water in a skillet and cover. Cook over medium heat for 3-4 minutes.
  2. Once the noodles are done, stir the noodles and the remaining ingredients and into the skillet. Cook for about 5 minutes until thoroughly heated.
