4th Of July Cookies

Ingredients
  • 1 cup butter (2 sticks)
  • 1 cup sugar
  • 1 egg
  • 1 tbsp milk
  • 1 tsp vanilla
  • 2 ¾ cups flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • Red food coloring
  • Blue food coloring
Instructions
  1. Preheat oven @ 350 degrees.
  2. Mix butter till creamy. Gradually add sugar and beat until light and fluffy. Beat in egg, milk, and vanilla. Combine flour, baking soda, and salt. Gradually add to creamed mixture. Use food coloring paste to tint one third of the dough red and another third blue, kneading the dough to evenly distribute the color. Leave the last third untinted. Chill for ease in handling (about 1 hr).
  3. Roll out cookie dough on lightly floured surface to ⅛” thickness. Cut out a bunch of larger stars. With a medium-size cutter, cut a star from the center of each large star. Now use the medium stars to fill in the centers of contrasting larger stars lightly pressing them in place. Press the medium stars into the larger stars' centers. Using a third, smaller cutter, you can even create tricolored stars.
  4. Bake for 8 - 10 minutes.

Spaghetti and Stuffed Meatballs

 

 

Spaghetti and Stuffed Meatballs

  • 4 sticks of mozzarella string cheese cut into 18 cubes
  • ½ cup bread crumbs
  • 1 jar tomato pasta sauce
  • 1 lb ground beef
  • 2 tbsp chopped onion
  • ½ tsp salt
  • ½ tsp oregano
  • 1 egg
  • spaghetti
  • ⅔ shredded parmesan cheese
Instructions
  1. Place cheese cubes in a freezer bag and freeze for about 1 hr.
  2. Heat over to 375 and line a pan with foil. Spray foil with cooking spray.
  3. In a large bowl, mix the bread crumbs and 3 tbsp of the pasta sauce. Then stir in the beef, onion, salt, oregano, and egg. Shape the mixture into 18 balls Press 1 of the cheese cubes into each of the balls and seal it inside. Bake for about 10 minutes.
  4. Pour the remaining pasta sauce into a dutch oven. Cover and heat till simmering. Stir in meatballs when they are done and reduce heat to medium-low. Cover and simmer for an additional 10 minutes or so (ours took closer to 15 minutes) or until the meatballs are thoroughly cooked and no longer pink in the center.
  5. Cook the spaghetti as directed on the package. Serve the meatballs and sauce over the spaghetti and sprinkle Parmesan cheese over the top.

Chicken Enchiladas

 

 

Chicken Enchiladas

  • 2 cups salsa
  • 1 8-oz package of cream cheese (cubed)
  • 1.5 - 2 lbs of cubed boneless skinless chicken
  • 8 flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup heavy whipping cream
Instructions
  1. Preheat your oven to 350. Spray a 9" x 13" baking dish with non stick spray.
  2. In a saucepan, stir together salsa, cream cheese, and chicken. Cook until the cream cheese melts.
  3. Spoon 2-3 tablespoons of the mixture down the center of each of the tortillas. Roll up the tortillas and place seam side down in dish. Sprinkle with cheeses. Drizzle the heavy whipping cream over the top.
  4. Bake for 30 minutes.
