As you all know, I am huge fan of Gooseberry Patch cookbooks. This one does not disappoint! The ingredients of these recipes will easily be found in your pantry. The instructions are easy to follow. There are also so many choices in here that there is something for everyone!

Here is one of the recipes:

Bachelor Style Skillet Lasagna

Serves: 4
Ingredients
  • 1 lb ground beef
  • 2 14-oz cans beef broth
  • 14-1/2 oz can diced tomatoes
  • ¼ tsp Italian Seasoning
  • ¼ tsp garlic powder
  • 2 cup rotini pasta, uncooked
  • ½ cup shredded mozzarella
  • Garnish: Grated Parmesan cheese
Instructions
  1. Brown meat in a skillet over medium heat; drain.
  2. Stir in broth, undrained tomatoes, and seasonings; bring to a boil.
  3. Stir in uncooked pasta. Cover and simmer for 12 - 14 minutes, until pasta is tender.
  4. Stir in mozzarella cheese.
  5. Top with parmesan cheese and serve.

Freschetta Pizza

All pizzas are not created equal. I recently learned that when I tried the Freschetta FlatBread Pizza.  I’m so use to frozen pizza tasting — well, pretty bland.  Freschetta pizzas?  Not bland at all!  My family and I tried the Zesty Italian pizza and I’d give it two thumbs up!  This flatbread pizza has the thinnest crust I’ve ever seen.  Thin, but yummy though.  The Zesty Italian pizza has pepperoni, genoa salami, italian sausage, and mozzarella and asiago cheese.  What impressed me was that these are quality ingredients.  They use all-natural cheeses and a sauce made from real, ripe tomatoes.  The meat is in big chunks with a ton of flavor.  You see these kind of ingredients on fresh pizzas — not frozen ones!  Yet, Freschetta managed to do it and keep the taste!  There are other varieties you can try also:   Roasted Garlic and Spinach, Pepperoni, and Five Cheese.  (I’ve tried all except the Roasted Garlic and Spinach, and they were all yummy).

Lasagna Toss

An easy to make meal for those who like quick dinners!

Ingredients
  • 2 cups uncooked penne pasta
  • 1 lb Italian sausage
  • 1 jar (26 oz) spaghetti sauce
  • 1 cup cottage cheese
  • 2 cup shredded mozzarella cheese
Instructions
  1. Preheat your over to 350 degrees. Grease a 2.5 qt baking dish.
  2. Prepare penne pasta according to the directions on the box.
  3. Cook and stir the Italian sausage in a skillet until browned. Drain and pour the cooked pasta and spaghetti sauce into the skillet. Stir well. Bring the mixture to a boil.
  4. Pour half of the hot pasta/sausage mixture in the baking dish. Add the cottage cheese and spread into an even layer. Sprinkle with half of the mozzarella cheese. Spread the remaining pasta/sausage mixture over the cheese and top with the mozzarella cheese.
  5. Cover and bake for about 25 minutes. Let stand for about 5 minutes before serving.
