 photo allstatelogo_300x60_zps5487a605.jpgLIfe is always interesting be it your home, in your school, or at your work.  However, to make one keep their sanity, you must celebrate moments of simplicity and contentment in life.  As hard as it may be, you have to get over the little trivial things that can happen on a daily basis that drive you crazy.  Inside you have to triumph over adversity, fear or doubt.

When I started this blog, I had no idea what I was doing.  Heck, I am still not an expert baker or cooker (though my kids tell me I am a good cooker all the time!).  However, I had to move beyond thinking I looked like an idiot with some of my recipes.  I had to realize that not everyone is going to like what I make.  However, I also had to get rid of the fear that all of my recipes were going to NOT turn out.  What surprised me the most was that most of my recipes do turn out.  Every so often I try something that doesn't win over my family. 

Granted, life isn't as simple as a cooking/foodie blog.  I know that.  However, if you can overcome small challenges like this, you too can have an Allstate Good Life

Gluten Free Quinoa Cake Recipe

Gluten Free Quinoa Cake Recipe

Ingredients
  • 2 cups quinoa flour
  • ½ cup sorghum flour
  • ¾ cup almond meal
  • 1 teaspoon baking soda
  • 2 teaspoon ground cinnamon
  • 1 cup coconut palm sugar
  • 3 organic eggs
  • ½ cup olive oil
  • 2 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1 cup unsweetened coconut flakes
  • ½ cup seedless dates
  • ¼ cup orange juice
Instructions
  1. In a mixing bowl, mix together flours and dry ingredients.
  2. Add eggs, oil, vanilla and orange juice. Then beat to combine.
  3. Stir in the carrots, coconut and dates by hand.
  4. Preheat the oven to 350 degrees
  5. Pour the batter into the backing pan and bake for about 25 to 35 minutes.
