Noodle Casserole
  • 8 oz egg noodles
  • 1 lb ground beef
  • 1 chopped onion
  • 14 oz can of tomato sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp ground cinnamon
  • 1 cup cottage cheese
  • ½ cup shredded cheese
  1. Preheat oven to 350 degrees. In the meantime, cook the noodles as directed on the package.
  2. Brown the ground beef with the onion. Drain. Mix in half of the tomato sauce, salt, pepper, and cinnamon. Pour into a baking dish.
  3. Pour noodle in an even layer. Top with cottage cheese, onions, and cheese. Pour remaining tomato sauce over the top. Bake for 30 minutes.

Spaghetti and Meatball Stew

This recipe is a new favorite in our house. This should make 4 servings. However, the next time I make it, I will be doubling the recipe, because Bill and I could have eaten more. My kids both had almost 3 bowls of it each!


Spaghetti and Meatball Stew
  • 2 tbsp milk
  • 1 egg white
  • ½ lb ground beef
  • ¼ cup bread crumbs
  • ⅛ tsp pepper
  • 2 cups water
  • 2 cups pasta sauce
  • 1⅔ cups rotini noodles
  • 2 tbsp Parmesan cheese
  1. Heat over to 450 degrees. In a bowl, mix egg white and milk. Stir in ground beef, bread crumbs, and pepper. Shape into 1 inch balls and place in an ungreased 15x10x1 inch pain (I just used a cookie sheet). Bake about 10 minutes.
  2. Meanwhile, heat water and pasta to boiling. Stir in pasta, and reduce heat. Simmer for about 15 minutes or until pasta is done. Stir in meatballs and heat until hot. Serve with Parmesan cheese sprinkled over the top.

I’ve had a rough week at my place, so we ordered this on a night where we knew we didn’t want to make dinner.  As you all know, we love Pizza Hut here.  Needless to say, the Tuscani lasagna did not disappoint.  This was a filling meal for all of us, and there was none left when we were done.  Madison has turned into the pickiest eater ever, and she even cleaned off her plate.  We love that Pizza Hut has a great offering if you want good quality food without having to just order pizza.
