For easier cleanup, use paper cupcake liners in your muffin pans.  Coat the liners with cooking spray, so that the muffins don’t stick to the paper.

Need A Healthy Snack?

If you are like me, you are always looking for a healthy snack for you and your family. You are also looking for a snack that is easy and not time consuming to make. For my house, Orville Redenbacker popcorn is the answer. Orville Redenbacker’s popcorn is made with 100% whole grains and is a great source of fiber! Many of the varieties have zero trans fats. You can also buy them in 100 calorie packs! When I was doing Weight Watchers a couple of years ago, popcorn was one of those snacks that they highly recommended. I was actually told at one of my meeting to buy the Smart Pop popcorn, and if I wanted a more butter taste then I should use some spray butter (which would count as 0 points for those of you are using Weight Watchers).

What I personally love is that there is a variety for every person or every mood. If I am looking to be healthy, I either eat the smart pop or the 100 calorie packs. If I want to be really naughty, I have the movie theater butter (which is pretty darn close to move theater popcorn though I don’t feel like I am going to keel over with a heart attack while eating it).

I was going to take a picture of us all eating this popcorn (this was the movie theater kind in the picture), but I decided that I didn’t want to share. It was good. That being said, I have a great giveaway for all of you. I am giving away not one but two popcorn bowls (double the chances to win!). In each bowl, there are two bags of microwave popcorn to try and a couple of coupons. Sounds great, right? I like to make it easy to enter, so I’ll give you several ways:

Four Foods On Friday #24

Aghhhhh!!!! I forgot to do this last week, because I tried to wait for Friday to actually do the meme!!! Therefore, this week I am doing it now, so I don’t forget! If you’d like to participate, head over to Fun, Crafts, and Recipes.

#1. What’s your favorite food smell? Pork chops. The funny thing is that I really don’t like to eat them all that much but I love how they smell when they are cooking.
#2. What’s your favorite kind of apple? Ummm apple pie? I don’t really eat just apples.
#3. What veggies do you like in your salad? Carrots.
#4. Share a recipe that uses beef.

Lasagna Rolls

9 lasagna noodles
1 lb. ground beef
1 cup chopped onion
2 cloves garlic
1 jar (26 oz) pasta sauce
1 container (16 oz) ricotta cheese
1 1/4 shredded mozzarella cheese
1/2 cup grated parmesan cheese

Preheat over to 350 degrees F. Coat a 13×9 baking dish with cooking spray.

Prepare the noodles according to the packaging directions. Drain noodles. Rinse with cool water; drain again. Lay noodles flat on wax paper.

Cook the ground beef, onion, garlic in a skillet until browned. Drain fat. Add pasta sauce and heat to a boil. Spread 2 cups of meat sauce into prepared baking dish.

Mix ricotta and 1 cup mozzarella in a large bowl. Spread cheese mixture over each noodle.

Roll up noodles tightly. Place seam side down on top of the meat sauce in dish. Spoon the remaining sauce over rolls and sprinkle with parmesan. Bake rolls until heated through (about 30 minutes). Sprinkle remaining mozzarella and let stand for 5 minutes.
