Turkey Taco Salad

Ingredients
  • 12 oz ground turkey
  • ½ onion
  • 1 zucchini
  • 1 red bell pepper
  • 10 grape tomatoes
  • 8 oz romaine lettuce
  • 1 jalapeno
  • 1 lemon
  • 1 bunch cilantro
  • ½ cup monterrey jack cheese
  • 1 bag guacamole bites
  • 2 T olive oil
Instructions
  1. Dice the red pepper, onion, and zucchini.
  2. Halve the tomatoes.
  3. Chop the jalapeno and cilantro.
  4. Cut the lemon into wedges.
  5. Tear the lettuce into bite size pieces.
  6. Heat 1 T of olive oil. When hot, add the onion and cook for 2-3 minutes.
  7. Add the red bell pepper, jalapeno, and zucchini. Cook 2-3 minutes. Transfer to a plate.
  8. Add 1 T of olive oil in the same pan and cook the turkey for 4-5 minutes breaking the turkey up.
  9. In a bowl, toss the lettuce with the tomatoes and ½ of the guacamole bites.
  10. Divide between 2 serving plates and top with the turkey, vegetables, cheese, and a generous handful of guacamole bites.
  11. Sprinkle the cilantro and serve the lemon wedges on the side.

Seared Steak

Ingredients
  • 12 oz steak
  • 6 oz broccolini
  • ½ oz dill
  • 1 sweet potato
  • 1 oz peanuts
  • ½ t cinnamon
  • 4 T butter
  • 2 T Olive oil
Instructions
  1. Bring pot of salted water to a boil. Cook the broccolini in the boiling water for 30 seconds.
  2. Fill a large bowl with water and ice cubes.
  3. Drain broccolini and transfer it to the ice water. When cold, set aside.
  4. Chop the dill.
  5. Peel the sweet potato and cut into 8 equal pieces. Add the sweet potato pieces to a pot with cold water. Bring to a boil, lower the temp, and simmer for 15 minutes.
  6. Drain the sweet potato and return to the pot. Add 2 T of butter and cinnamon and mash with a fork.
  7. Season the steak with salt and pepper. Heat the oil in a skillet over medium heat. When hot, cook the steaks for 2 minutes on each side. Remove.
  8. Heat 1 T of oil and the remaining butter in a pan over medium heat. When the butter has melted, add the peanuts and stir for 1 minute.
  9. Add in the broccolini until hot and crispy.
  10. Serve the steak with the sweet potato and broccolini on the side. Top with fresh dill.

  • 1½ oz. Three Olives Cake Vodka
  • 1 oz. White Chocolate Liqueur
  • 2 oz. Milk
Instructions
  1. Shake with ice and strain into a chilled martini glass.
  2. Rim glass with vanilla frosting and multi-colored sprinkles!
