Ground Beef Risotto

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 garlic cloves, chopped
  • ¼ tsp pepper
  • 1 cup uncooked long grain white rice
  • 3½ cups Progresso beef flavored broth
  • ½ cup shredded carrot
  • ½ cup shredded fresh Parmesan cheese
  • 3 tbsp chopped fresh chives
Instructions
  1. Cook the beef, onion, garlic and pepper over medium high heat 5-7 minutes until beef is cooked through. Drain and stir in rice. Cook for 2 minutes stirring constantly.
  2. Stir in broth and heat until boiling. Reduce heat to medium low and cover. Simmer for 10 minutes.
  3. Stir in carrots. Cook uncovered for 5-7 minutes or until the liquid is absorbed.
  4. Remove from the heat and stir in the cheese. Cover and let stand for 3 minutes. Sprinkle with the chives and serve.

Cheesy Italian Pie

This is a pretty easy to make recipe that can be easily customized to what your family likes.

 

 

Cheesy Italian Pie

  • 1 15oz package folded refrigerated unbaked pie crusts (2 crusts)
  • 1 lb Italian sausage
  • 2 8oz can pizza sauce
  • 1 10oz package of frozen spinach, thawed and drained
  • 2 eggs
  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • ½ tsp dried Italian seasoning
Instructions
  1. Preheat oven to 425 degrees. Let the pie crusts stand at room temperature for 15 minutes.
  2. In a large skillet, brown the ground beef and drain. Stir pizza sauce and spinach into the ground beef and set aside.
  3. In a medium bowl, stir together eggs, ricotta, Parmesan cheese, and Italian seasoning. Line a 9 inch pie plate with 1 of the pie crusts. Spoon the ricotta mixture into the crust. Top with the beef mixture. Place the remaining pie crust over the filling. Seal and flute edge. Cut slits in the top crust to allow steam to escape.
  4. Bake for 25 minutes or until crust is golden brown.

  • 1 packet dry brown gravy mix
  • 1 cup cold water
  • 1 lb ground beef
  • 1 diced onion
  • 2 tsp minced garlic
  • 1 jar spaghetti sauce
  • ½ cup half-and-half
  • 1½ tsp Italian seasoning
  • ½ tsp dried rosemary
  • salt and pepper to taste
  • 8 ounces cooked egg noodles
  • ⅔ cup grated Parmesan cheese
Instructions
  1. Combine gravy mix and water until smooth and set aside.
  2. Brown the ground beef, onion, and garlic. Drain. Add the spaghetti sauce, cream, seasonings, and gravy. Bring to a boil. Reduce heat and simmer for 15 minutes.
  3. Add the noodles and ⅓ cup of the Parmesan cheese. Transfer to a greased baking dish and sprinkle with the remaining Parmesan cheese. Cover and bake at 350 degrees for 30 minutes.
