Crock Pot Chicken & Rice

I got the idea for this recipe from stick a fork in it.

 

Now, ours seemed a bit salty. I am still trying to figure out it was the Italian Dressing or the Cream of Chicken Soup. However, it was still a huge hit in our home, and we will definitely be making this again!

  • 2-4 frozen boneless skinless chicken breasts
  • 1 pkg. (8 oz.) cream cheese (let sit out to soften)
  • 1 can cream of chicken soup
  • 1 pkg. italian dressing seasoning (the dried kind in the packet)
  • rice
Instructions
  1. Stir the cream cheese, cream of chicken, and seasoning together in the crockpot. Add the chicken in and cover with the mix.
  2. Cook on high in your slow cooker for 4-6 hours or until the chicken is cooked and falling apart.
  3. Cook the rice as you normally would make it. Add the chicken and chicken mixture onto a bed of rice and enjoy!

  • 1 can (10¾ oz) Cream of Chicken Soup
  • 1 pkg frozen mixed vegetables (thawed)
  • 1 cup cubed cooked chicken
  • ½ cup milk
  • 1 egg
  • 1 cup all purpose baking mix
Instructions
  1. Preheat over to 400 degrees.
  2. In a 9" pie plate, mix the soup, vegetable, and the chicken.
  3. Mix the milk, egg, and baking mix. Pour over the chicken mixture and bake 30 minutes (or until golden brown).

Skillet Chicken & Veggies Parmesan

This easy to make recipe is super yummy and uses ingredients you have around your house.  It cooks up pretty quick too.

  • ¼ cup Italian Dressing
  • 2 garlic cloves minced
  • 4 boneless skinless chicken breasts
  • 1 tsp basil
  • ¼ tsp black pepper
  • 1 pkg frozen mixed vegetable thawed
  • 2 tbsp grated parmesan cheese
Instructions
  1. Mix dressing and garlic in skillet and cook on medium heat for about a minute. Add chicken and season with ¾ tsp of the basil and pepper. Cook 4 - 5 minutes on each side or until the chicken is cooked through.
  2. Add vegetables and sprinkle with remaining basil. Cook 2 - 3 minutes or until vegetables are heated through. Sprinkle with the cheese.
