Fish Tacos with Crunchy Slaw

Ingredients
  • 12 oz Tilapia Fillets
  • 2 Limes
  • 4 oz red cabbage
  • 1 avacado
  • 1 onion
  • 1 bunch cilantro
  • 1 red bell pepper
  • 6 flour tortillas
  • 2 T sour cream
  • 2 T Hot sauce
  • 2 T Olive Oil
Instructions
  1. Thinly slice the cabbage.
  2. Juice one lime and cut the other one into wedges.
  3. Cut the bell pepper and onion into thin strips.
  4. Chop the cilantro.
  5. Halve, peel, pit, and slice the avocado.
  6. Heat 1 T of oil. When hot, sweat the onions for 2 minutes.
  7. Add in the red pepper and stir.
  8. When soft, lower the heat and let it sit for 2 more minutes.
  9. Season the fish with salt and pepper on both sides and add to the pan. Cover and cook for 4 minutes flipping once.
  10. Uncover and stir every 2 minutes breaking up the fish. Transfer fish into a bowl.
  11. In another bowl, combine the sour cream and lime juice. Toss in the cabbage and season with the remaining salt and pepper.
  12. Mix well.
  13. Wipe the pan clean and warm tortillas over medium heat for about 1 minute.
  14. Fill the tortillas with the fish and slaw. Top with Avacado slices and fresh cilantro. Serve with lime wedges and hot sauce on the side.

Having A Party — You Must Get Qdoba Catering

If you follow my personal blog, you will know that we celebrated Will’s birthday last weekend. One of the highlights of the day has to be Qdoba! Qdoba catering bring unique variety to any catered event you would have. You can serve as few as ten or as many as 100 people. We had about 20 people. They do prefer a 24 hour notice, because everything is fresh. They also deliver too! (Well, worth it too if you ask me!)

It was so nice watching them set up. Originally, we were suppose to have this outside. However, it rained. We moved it into the house, and they were able to work with me so we could get this all into my kitchen. We end up getting the Hot Naked Burrito Bar.

What does the Hot Naked Burrito Bar include? You get cilantro-lime rice, choice of black or pinto beans, marinated grilled chicken, marinated grilled steak, three salsas (salsa roja, salsa verde, pico de gallo), cheese, sour cream, hand-smashed guacamole, handmade tortilla chips. We also added on the 3-cheese queso (OMG – this is a must get add on. It was the only thing I didn’t have left overs of!!!!!) and we also had brown rice.

Want to know how good it was? I already had a line of people waiting for them to finish setting up. Normally, at a party, you are twisting arms to get people to eat. Nobody had to be told more than once. Surprisingly, the first two people in line to get food were kids! They stopped playing because the food looked so good and they wanted first dibs! The most awesome part of this Naked Burrito Bar was that there was literally something for everyone, and you could easily make your own combination for a great dinner.

Would I use Qdoba again for a party? Yes, yes, yes!!!! Their food is phenomenal. They use fresh, healthful, and minimally processed ingredients. There was something for everyone. Everyone came back for 3rds, 4ths, and even 5ths! Yes, it was that good. (And I can tell you that the leftovers are pretty awesome too!).

I highly, highly, highly recommend getting Qdoba for your next event be it a graduation, a party, etc. I know everyone at my party was impressed and will be heading into their restaurant for dinner very soon!

Taco Bake

Ingredients
  • 2 lb ground beef
  • 1 jar (16 oz) salsa (2 cups)
  • 1 package taco seasoning mix
  • 1 can (15 oz) pinto beans or Progresso® black beans, drained, rinsed
  • 1 can (3.8 oz) sliced ripe olives, drained
  • 1 can (13.8 oz) Pillsbury® refrigerated classic pizza crust
  • ½ cup corn chips, crushed
  • 2 cups shredded Cheddar cheese (8 oz)
Instructions
  1. Preheat your oven to 400°F. Brown ground beef and drain. Stir in salsa and taco seasoning mix. Reduce heat; simmer uncovered 5 minutes.
  2. Stir beans and olives into beef mixture. Cook until thoroughly heated. Spoon into ungreased 13x9-inch (3-quart) glass baking dish. Unroll dough over the filling; sprinkle crushed corn chips over top.
  3. Bake 13 to 17 minutes until light golden brown. Sprinkle cheese evenly over chips; let stand 5 minutes to melt cheese. Serve with lettuce, tomato and sour cream or whatever else you put on your tacos!
