Tip Of The Day
Written by Lisa on August 3, 2008 – 12:10 am -Focaccia is a flat Italian bread that is an excellent accompaniment to any Italian dinner. Leftever focaccia makes great sandwiches. You can also use focaccia as a pizza crust! Just add tomato sauce, mozzarella cheese, and your favorite toppings and bake until cruse is golden and the cheese is melted.

Chili Mac n Cheese
Written by Lisa on July 6, 2008 – 3:51 pm -This easy to make recipe is better than Hamburger Helper. However, it is only okay. I am still trying to figure out what needs to be changed to make it excellent. If you have any ideas, let me know!
1 lb ground beef
2 1/3 uncooked rotini pasta
1 tsp chili powder
2 1/4 cup water
1 can diced tomatoes
2 cups shredded taco flavored cheese
Brown ground beef and drain. Stir in uncooked pasta, chili powder, water, and tomatoes. Heat to boiling. Reduce heat, cover, and simmer for around 10 - 12 minutes or until pasta is tender.
Remove from heat and let stand uncovered for 5 minutes. Stir in cheese until melted and sprinkle with additional chili powder.

Pizza Breadstick Casserole
Written by Lisa on June 24, 2008 – 10:47 am -

1 lb ground beef
1/2 cup diced pepperoni
5 tbsps of diced onions (I personally use less since I am not a huge onion fan)
1 jar chunky tomato pasta sauce
1 box (10.6 oz) Pillsbury refrigerated Parmesan breadsticks with garlic
2 cups shredded Colby-Monterey Jack cheese blend
Preheat oven to 375 degrees. Spray a 12×8 (2 qt) glass baking dish with cooking spray.
Brown ground beef and drain. Stir in pepperoni, onions, and pasta sauce. Cook until boiling.
Unroll dough into 1 large rectangle. Spread garlic mixture from the box evenly over the dough. Separate dough into 10 breadsticks. Cut each breadstick into 3 crosswise pieces.
Pour ground beef mixture into baking dish. Spread dough pieces evenly over hot ground beef mixture.
Bake 15 - 18 minutes or until topping is golden brown and no longer doughy. Sprinkle with cheese and bake 10 minutes longer or until cheese is melted.
