Tuna Noodle Skillet

This is a quick easy to make recipe.  This works well when you don’t have a lot of time to make dinner!

3 1/2 cups of mini penne noodles
1 cup chopped celery
2 tbsp water
1/2 cup sour cream
1/2 cup ranch dressing
1 can tuna, drained, flaked
1 jar chopped pimientos, drained

Cook and drain noodles as directed on the box. While they are cooking, place celery and water in a skillet and cover. Cook over medium heat for 3-4 minutes.

Once the noodles are done, stir the noodles and the remaining ingredients and into the skillet. Cook for about 5 minutes until thoroughly heated.

Tuna Casserole

3 1/2 cups of bow tie pasta
1 can of cream of mushroom soup
1/2 cup sour cream (or milk)
1 can of tuna packed in water, drained
1 cup shredded American cheese

Preheat oven to 350 degrees. Coat a 2 qt casserole dish lightly with cooking spray. Cook pasta according to the directions on the package. Drain.

Combine soup, sour cream, pasta, and tuna. Stir in 1/2 cup of cheese.

Spoon mixture into prepared dish and sprinkle the remaining cheese on top.

Bake until bubbly (about 25-35 minutes).

Makes 4-6 servings

copy-of-2005_10-oct010.jpg Hi, I am Lisa. I am originally from Green Bay, WI (yes, I am a Packer fan) and now living in Illinois. I have 4 year old daughter and a newborn little boy who surprised us by being born 3 weeks early. (He’s 13 months now!)

Currently, I am a work at home mom who is involved in several side projects. In 2004 and 2005, I worked for a company creating websites. Unfortunately, that went away. However, we introduced our clients to blogging which is how I got into it. I started blogging in April 2006 just to keep in touch with my friends and family in Green Bay. In July 2006, I suffered a miscarriage, and I used my blog to get through that. I now talk about my life and blog for several companies. I still do freelance for a few companies. My other blogs are Lisa Reviews, My Thoughts, Ideas, and Ramblings, and My Road Less Traveled By. I was also one of 15 bloggers to attend the Sony Mommy Bloggers Event in April of 2008 and one of 15 bloggers invited to the Pampers Mommy Bloggers Event.

Welcome!

Anybody who knows me knows I don’t cook. I figure that there have to be other people out there like me. I created this blog to help those people. I will try to include photos when possible of the recipes. Unfortunately, sometimes people in my house decide to eat before I can get a picture. I am hoping that this can become a resource for those who are not cooking inclined. I am also trying a star system to help you determine what recipes will work best for you and your family. As you can see from the recipes I have already included that the main thing I am looking for is easy. With having 2 little ones under the age of 5, I need easy. My rating system goes from 1 star (worst) to 5 stars (best).

If you try any of these recipes, let me know. Also, if you made any changes, I would love to know that too! Happy Eating!
