125 Best Casseroles and One-Pot Meals is one of my favorite cookbooks.  Casseroles and one-pot meals are the ideal solution for busy home cooks who want wonderful food with a minimum of fuss and maximum taste. Convenience, easy preparation, economy and portability make this method of cooking perfect for today’s busy lifestyles.  I know I am running most nights after school getting the kids everywhere they need to be.   Many of these recipes you can actually make ahead too!  This cookbook includes big casseroles to delight a number of friends or to freeze in small amounts for future family meals, to long-simmering stews that will warm and comfort all on cold winter nights. Turkey Vegetable Tray

Ingredients
  • Kale
  • Celery
  • Baby carrots
  • Sweet peppers
  • Cucumbers
  • Yellow zucchini
  • Cherry tomatoes
Instructions
  1. Arrange kale along the outside of the platter you are using. Those will be tail feathers.
  2. Add the celery on top of the kale (but not completely covering it).
  3. Cut half of the zucchini and use that as the turkey's head.
  4. Slice the peppers and use them as the body.
  5. Add in the cherry tomatoes as the caruncles.
  6. Slice the cucumbers and use that as the breast.
  7. Use 2 celery sticks as the feet.
  8. Use little pieces of the peppers as the eyes and the beak. We used toothpicks broken in half to get them to stick.

The serving sizes for these meals are huge! We had leftovers for everyone of these meals! They were totally easy to make too! Best of all, they were delicious! I would highly, highly, highly recommend HelloFresh. I can’t get food this good at my local grocery store and I would definitely use them again!
