Ingredients
  • 2 cups chopped cooked chicken (we actually pulled out 6 boneless skinless chicken breasts when we made it)
  • 1 pkg (8 oz) Philadelphia cream cheese cubed
  • 1 jar salsa (8 oz)
  • 8 (6 inch) tortillas
  • 12 oz Velveeta Pasteurized Process Cheese Spread, cut up
  • ¼ cup milk
Instructions
  1. Stir chicken, cream cheese, and ½ cup of salsa in saucepan on low heat until cream cheese is melted. Then spoon ⅓ cup chicken mixture down the center of each tortilla (we just eyeballed this) and roll the tortillas up.
  2. Place them seam side down in a lightly greased 12x8 inch baking pan.
  3. Stir the Velveeta cheese and milk in saucepan over low heat until melted.
  4. Pour the sauce over the tortillas and cover with foil.
  5. Bake at 350 degrees for 20 minutes. Pour remaining salsa over the tortillas.

  • 2 cups tomato paste
  • 1 pkg chicken breast tenders (we cubed ours to make it easier for the kids)
  • 2 cups Mozzarella cheese
  • 8 oz uncooked spaghetti
Instructions
  1. Heat over to 350 degrees.
  2. Into a glass baking pan, spread 1 cup of tomato paste. Add in chicken and spoon remaining pasta sauce over the chicken. Sprinkle with cheese.
  3. Bake uncovered for 30 - 35 minutes or until mixture is bubbly and chicken is pink in the center. While that is cooking, make spaghetti like you normally do.
  4. Serve chicken and sauce over the spaghetti.

Ingredients
  • 1 box (16 oz) lasagna noodles
  • 1 lb sweet Italian sausage
  • 1 medium yellow onion, chopped
  • 2 cloves garlic, minced
  • ½ tsp crushed red pepper flakes
  • 2 eggs
  • 2 lbs ricotta cheese
  • 2 cups shredded mozzarella cheese (8 oz)
  • ¼ cup grated Parmesan cheese
  • 1 jar (48 oz) seasoned tomato sauce
Instructions
  1. Preheat oven to 350 degrees F. Cook lasagna noodles as package directs; drain and rinse.
  2. Meanwhile, in a nonstick skillet, cook sausage and onion till brown. Drain fat. Stir in garlic and red pepper flakes. Remove from heat and set aside.
  3. In a large bowl, combine eggs, ricotta, mozzarella, Parmesan, and basil. Mix well.
  4. Spread a layer of tomato sauce in a 13 x 9 inch baking dish; top with a layer of noodles. Cover noodles with a layer of the cheese mixture; top with some sausage mixture. Cover with a layer of sauce. Repeat layering with noodles, cheese mixture, sausage mixture, and sauce. Top with final layer of noodles and sauce.
  5. Bake covered for 45 minutes. Uncover and bake about 15 minutes. Let stand for 5 minutes before serving.
