Zucchini skins often have a gritty texture that a quick rinse doesn’t remove.  Use a vegetable wash or gently scrub with a soft vegetable brush under running water.

When choosing zucchini, there are several things to keep in mind.  Make sure it is heavy for its size, firm, and well shaped.  It should be bright green and be free of any soft spots.
